Venison Jerky Recipe
Ingredients & Preparation
โข 1 pound very lean venison (semi-freeze for easier slicing)
โข Slice into 1/8โ1/4 inch strips โ thinner slices dry faster
โข Cut with the grain for chewier jerky; against the grain for more tender jerky
Marinade
โข 4 tbsp soy sauce
โข 4 tbsp Worcestershire sauce
โข 1 tbsp ketchup
โข 1/4 tsp pepper (add more for hotter jerky)
โข 1/4 tsp garlic powder
โข 1/4 tsp onion salt
โข 1/2 tsp salt
Instructions
Marinate venison strips in the sauce for 2โ3 hours.
Drain in a colander, then lay strips on drying trays without overlapping.
Turn meat at least once during drying for best results.
Dry at 145ยฐF for 8โ10 hours.
Jerky is ready when it bends like a green willow branch without breaking.
For long-term storage, keep refrigerated.
